Do you have 25 minutes? Yes? Because then you’ll be on your way to this easy, healthy and oh-so-delicious taco night dinner.

I mean, we can’t ask for much more. Quick, simple, totally unfancy but ridiculously good.

SO. What’s in these yum-olicious tacos? Let’s discuss:

We have a slightly spicy and flavor-packed ground pork base. With a little zingy lime juice, a dash of cilantro, some smoky chipotle pepper.

Next, we pile on some sweet and juicy mango salsa, before tying it all together with either a little queso fresco OR, to keep these dairy free, a little creamy dreamy avocado.

Sweet, spicy, fresh! And on the table in a flash.

It’s no wonder that these suckers have been on repeat at our house for the last six years. Yes, SIX years. I first posted these tacos wayyyy back when I started this website and we’ve continued to enjoy them ever since.

Now if that’s not a ringing endorsement, then I don’t know what is. So go get your taco on ASAP.

Tips & Tricks

  1. Alright, let’s start with the basics. You’ll need about 1 ½ to 2 ripe mangoes, depending on their exact size, to give you the diced amount listed in the recipe below.
  2. Along those lines, you’ll also need 1 small jalapeno and 1 small red onion. With the red onion, use any extra that you have from the salsa in the pork – this will be roughly the ¾ cup listed but it’s totally fine if you have slightly more or less.
  3. Feel free to experiment with the amount of minced chipotle pepper in the pork. As written, there’s a touch of heat in the final tacos but nothing crazy. So adjust to your taste as desired.
  4. And finally, I LOVE to serve these tacos with a big ol’ salad. Nice and quick and really balances out the meal.

Yup, taco night is totally the best night of the week.

Ground Pork Tacos with Mango Salsa

These 25 minute ground pork tacos with mango salsa are easy, healthy and delicious! On the table in a flash, they’re sweet, spicy and ridiculously simple to make. Dairy free and gluten free options included.

Ingredients

For the mango salsa:

  • 1 ½ cups diced fresh mango
  • ¼ cup minced red onion
  • 2 tablespoons minced jalapeno (seeded & membranes removed)
  • ¼ cup chopped fresh cilantro
  • juice of ½ a medium lime
  • 1 teaspoon olive oil
  • ¼ teaspoon fine sea salt

For the tacos:

  • 1 tablespoon olive oil
  • about ¾ to 1 cup chopped red onion
  • 2 to 3 teaspoons minced chipotle peppers in adobo sauce*
  • ¼ teaspoon fine sea salt
  • 1 pound ground pork
  • juice of ½ a medium lime
  • ¼ cup chopped fresh cilantro
  • ½ cup queso fresco (optional - see notes)**
  • corn or flour tortillas, warmed, for serving

Instructions

For the mango salsa:

  1. Add all the ingredients for the salsa to a small bowl and toss to combine. Taste and adjust any of the flavors as desired. Set aside.

For the tacos:

  1. Add the olive oil to a large nonstick skillet set over medium heat. When hot, add in the onion, chipotle pepper and salt. Cook for about 3 to 4 minutes, until the onion has softened.
  2. Add in the ground pork and continue to cook, breaking it up with a wooden spoon, for about 5 minutes, until no longer pink and cooked through. Remove from the heat.
  3. Stir in the lime juice, cilantro and queso fresco (if using). Taste and adjust any seasonings as desired.
  4. To serve, place some of the pork mixture down the center of a tortilla using a slotted spoon, then top with some of the mango salsa. Enjoy!

Notes

*If you are gluten free - be sure to check the ingredients on your chipotle peppers. Some brands contain wheat! Also, be sure to use gluten free tortillas of choice.

**To keep this dairy free - omit the queso fresco and add some avocado slices or mashed avocado to the tacos. It helps add some of the creaminess you would get from the cheese. Additionally, you may need to add a touch more salt to the pork mixture - just taste and add as needed.
