To say I had a thing for rice krispie treats when I was a kid would be an understatement.  I was utterly and completely obsessed with these things.  Whether store-bought or homemade, I couldn’t get enough.  My grandma used to make a platter to bring to lots of family gatherings and I vaguely remember my mom buying massive boxes from the grocery store so she could have them on hand for an occasional treat.

My obsession continued into college, where they sold giant chunks of rice krispie treats at the cafeteria.  Somewhere along the way though, I stopped eating them.  Not because I didn’t still love them, but I guess I just got sidetracked by all the great cookies, brownies and cakes out there.

I decided this past weekend that it was time to bring back the rice krispie treats.  When debating what kind to make, I gravitated almost immediately towards the box of Trader Joe’s Joe Joes sitting in our cabinet.  Cookies and cream it was.  And let me tell you, these were just as good, if not better, than all those rice krispie treats I remember.  They are gooey, slightly buttery and filled with that wonderful oreo goodness that takes me right back to my childhood.  Top them off with some white chocolate and some more crushed oreos and you have an awesome dessert that is super quick and easy to pull together.

Yield: makes a 9 by 13 inch pan of rice krispie treats
Ingredients
For the rice krispie treats:
  • 15 oreo sandwich cookies
  • 6 cups rice krispie cereal
  • 4 tablespoons unsalted butter
  • 5 cups mini marshmallows
For garnish:
  • 6 to 8 oreo sandwich cookies
  • about 8 ounces white chocolate (or white chocolate bark), chopped
Instructions
  1. Spray a 9 by 13 inch baking pan with nonstick cooking spray and set aside.
  2. Add the 15 oreo cookies to a large ziplock bag and crush using a rolling pin (you want there to still be some chunks). Add the crushed oreos to a large bowl. Add in the rice krispie cereal and mix to combine. Set aside.
  3. In a medium saucepan set over medium heat, melt the butter. Add in the marshmallows and stir constantly until the mixture is completely melted and combined. Moving quickly, pour the marshmallow mixture into the bowl with the cereal. Use a lightly greased spatula to mix together all the ingredients.
  4. Transfer the mixture to the prepared baking pan. Use the spatula (and your fingers) to press the mixture evenly into the pan. Let sit until completely cooled and set, about 30 to 40 minutes. Cut into squares.
  5. For garnish - Crush the extra oreo cookies using the same method described above and set aside. Add the chopped white chocolate to a microwave safe bowl. Microwave at 50 percent power for 30 second intervals until the chocolate is completely melted. Spoon a small amount of white chocolate on the top of each bar. Use the back of the spoon to smooth it around. Immediately top with a sprinkle of the crushed cookies, before the chocolate has a chance to set. Let the chocolate harden completely before storing in a container.
Notes
These rice krispie treats are wonderful completely plain (with no topping). We liked them best that way for a quick snack. However, we also enjoyed them with the white chocolate topping, especially for dessert. The garnish is completely optional, but I thought it made them look pretty.
