Truth – the vanilla bean whipped cream is totally optional here.  But it’s so good that I thought it should go ahead and get a spot in the title.  I always forget how much I like homemade whipped cream … until I make it.  And then I can’t step away.  Or my husband – I think he’s actually worse than me.

This honey lime fruit salad is a perfect summer dessert in my book.  It’s light and refreshing, yet still a little bit decadent with the whipped cream.  You can whip it up in just a few minutes – the longest part is chopping up all the fruit.  Another bonus?  Make the salad portion ahead of time for an easy entertaining option.

And who says this is just for dessert?  It’s also great for snacking.  Or even for breakfast.

Because who can resist a big bowl of fruit with creamy vanilla whipped cream during these hot summer months.  Not this girl, that’s for sure.

Yield: 6 to 8 servings

Honey Lime Fruit Salad with Vanilla Bean Whipped Cream

Recipe for honey lime fruit salad with vanilla bean whipped cream. A simple and refreshing dessert for summer.

Ingredients:

For the fruit salad:

  • 1 pint blueberries
  • 16 ounces strawberries, sliced
  • 1 pineapple, chopped
  • 2 tablespoons honey
  • juice of 1 lime
  • ¼ cup lightly packed fresh mint leaves, minced

For the whipped cream:

  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • ¾ teaspoon vanilla extract
  • ½ of a vanilla bean, split and scraped

Directions:

  1. To make the fruit salad – add the blueberries, strawberries and pineapple to a large bowl. Toss to combine. In a small bowl, whisk together the honey, lime juice and mint. Pour the dressing into the bowl with the fruit and toss gently until combined.
  2. To make the whipped cream – add the heavy cream, sugar, vanilla extract and vanilla bean seeds to the bowl of a stand mixer fitted with the whisk attachment. Start with the mixer on low and then increase the speed to medium high. Whip until stiff peaks form. Do not over beat, or the mixture will look curdled.
  3. Serve the fruit salad with a dollop (or more!) of whipped cream.

Feel free to substitute other fruits in this salad. It would be great with a number of different options. The three listed are just some of my favorites.
