Roasted Brussels Sprouts and Red Cabbage Pizza
This pizza. I can’t even begin to tell you just how much I love love lurve it.
We usually have some sort of homemade pizza every week or two since it’s an easy and fairly fast meal (well, unless I decide to fancy it up and over-complicate the toppings – which I’ve been known to do —> for the record, totally worth it though!).
But anyway, with a few exceptions, I change up the toppings constantly. I get bored and just have fun trying different things … which makes my next statement all that more important.
We’ve had this brussels sprouts pizza three times … straight in a row. I’m so so stuck on it. And for good reason!
Those little green jewels of goodness just make it outrageously good.
The brussels sprouts are first roasted in the oven with just a bit of olive oil, honey and salt. Simple perfection.
You’ll then throw them on the pizza with some shredded red cabbage (the color!!), classic mozzarella cheese and some toasted walnuts.
It gets all bubbly and awesome in the oven … and then you’ll finish it off with just a hint of lemon zest to brighten it all up. Swoon.
