Simple and fluffy banana bread quinoa muffins! Made with honey, banana, quinoa flour and warm spices! Finished with a streusel topping!

I mean really, who knew that baking could be just so darn fun.

So. Let’s discuss how these muffins go down. We start with a standard banana bread base, filled with cinnamon, nutmeg and of course plenty of banana. It’s naturally sweetened with some honey and maple syrup, and infused with a good amount of vanilla.

And then, then we have that hint of something special! From quinoa flour! It gives the muffins a touch of that nutty, earthy flavor that we know and love from this whole grain.

But wait. It gets better. We finish the muffins off with a crumb topping – for that extra boost of cinnamon sugary sweetness. And I think we can all agree that crumb toppings make just about anything a little bit better! <— In case you can’t tell, I am very into crumb toppings at the moment!

The muffins bake up with a beautifully domed top, a gorgeously golden hue and well, just make the whole house smell fantastic.

And when you enjoy them warm from the oven while sipping a steaming mug of coffee? I promise they will make just about any day even sweeter!

Let’s play a little game. It’s called guess how many times I’ve made this vegetable cajun brown rice!

Completely delicious. Really simple to pull together. Works as a main dish or a side dish!

Quick and easy vegetable cajun brown rice! Cooks in one skillet! Packed with veggies, flavorful spices and kidney beans!

And over the course of the last month, the total bane of my existence. <— I’m not dramatic or anything.

As written down below, it’s an awesome recipe. But goodness me, the amount of meh batches we went through to get here. It wasn’t pretty. I was so close to giving up, but hey-o! Being stubborn comes in handy sometimes! Umm, I think? Yes, we’ll go with yes in the case of this brown rice.

I’ll spare you all the nitty gritty details, but suffice it to say that I just couldn’t get the rice to work consistently with the original cooking method I kept trying.

But!! The light bulb finally went off and I decided to try cooking the dish just like I would fried rice. And ooooo baby is the end result good.

We sauté a whole bunch of delicious veggies (like onion, celery, bell pepper, corn!) until tender, before stirring in an array of spices to really pump up the flavor. Then! We remove it all to a bowl and cook cold brown rice in the same skillet until hot and toasted (<— so good!). It all gets mixed backed together, along with some kidney beans and fresh cilantro, and is served with a dash (or three!) of hot sauce for added heat.

It’s easy, it’s tasty and it takes only about 30 minutes to make. Yes, yes, yes!

It’s enchilada time! Because frankly, it’s been far, far too long since I’ve shared any sort of enchilada recipe.

So today, I bring you these grilled vegetable enchilada bowls. Which are basically just another way for me to get my enchilada fix. But in a lighter, fresher sort of recipe, because hellooo summer!

These grilled vegetable enchilada bowls are a fun and fresh take on classic enchiladas! Healthy, light and packed with flavor!

Now, these summer vegetable skillet enchiladas are still one of my favorite meals ever. <— Side note, I just went to look at my post for that recipe and realized I started it off with the same exact two sentences. Can you say creature of habit???

ANYWAY. I make those skillet enchiladas probably once every other week. But, I felt like it was time to shake it up a bit. And feed my other current obsession … grilled veggies. I’m telling you, summer weather hits and all I want to do is grill all the veggies.

Which brings us to today’s enchilada + grilled veggie combo. Or otherwise known as SO MUCH GOODNESS.

So! Let’s discuss how they go down. We have a super flavorful quinoa pilaf base with some garlic, walnuts and plenty of fresh cilantro. We have deeelicious grilled summer veggies, like zucchini, bell pepper and eggplant. There’s a bit of black beans for some protein and cool, creamy avocado for texture. And then! We smother it all in plenty of enchilada sauce!

Oh, and serve with some crunchy tortilla chips on the side, please and thank you. It’s my idea of a fantastic summer meal.

And just like that, it’s officially summer! Well, okay fine, unofficially, but we all know that Memorial Day is totally the marker for the start of the season.

Plus, it’s hot. And the heat has some sort of magical power that brings on my complete and utter laziness when it comes to cooking dinner.

With a long holiday weekend (!!) upon us, I feel like I need to leave you with a fantastic recipe. You know, in case you want to get your bake on in the kitchen over the next few days. <— Isn’t this what everyone does with their long weekends??? Or is that just me?

ANYWAY, today we chat these honey chipotle beer bread muffins!!! Yes, three exclamation points are totally warranted because holy smokes are these good.

With a soft and chewy inside, a crunchy top and a bit of heat, these honey chipotle beer bread muffins are irresistible! Just one bowl and a few minutes of prep!

And! I have one of you, my wonderful readers, to thank for the idea. Seriously, you guys are the best.

Quite a few months back, I got a request for a chipotle bread recipe – as in one with the chipotle incorporated into the actual dough. I’ve been thinking about it ever since and FINALLY have a recipe to share. A bit delayed, but I couldn’t be happier with it.

Now, beer bread has long been one of my favorite treats and this buttery honey beer bread always hits the spot. BUT. Beer bread muffins?? They mayyyy just be my new go-to instead of the typical loaf. Because:

1. They bake up much faster in the oven, which means you get to eat them much faster. <— Always important.

2. You get even more of that crunchy, awesome top. Which is what the husband and I tend to fight for whenever I make a regular loaf of beer bread (although, let’s be real, the soft & slightly chewy interior is also awesome).

And as for the flavor? Oh me oh my. A little sweetness from the honey. Some kick and smoke from the chipotle pepper. And of course that yeasty flavor from the beer.

There’s just a touch over 10 minutes of prep and only one bowl involved to get you on your way to major homemade bread happiness. Does it get any better? I think not my friends, I think not.

It’s time! To dust off your flip-flops, clean off the grill, bust out the watermelon basil agua fresca!

Because, summer summer summer! Well, at least here in our neck of the woods in balmy North Carolina. It was 90 degrees all weekend and most certainly feels like spring has officially left the building.

Fresh & light pesto tabbouleh summer salad! This flavorful dish is filled with a parsley pesto, juicy cherry tomatoes and cool crisp cucumber!

Can you tell it’s still early in the season because I haven’t started to complain yet about the heat??? Oh just wait my pretties, that is most certainly coming in a few months, ahem weeks? No no, I’m trying to be good. And I will admit that I am actually looking forward to summer this year as we now have access to both a lovely pool and a lake! Take that humidity!

ANYWHO. With temps soaring, all I can think about lately is salad. And pasta salad. And light, fresh meals.

Which brings us to this pesto tabbouleh summer salad!

Now, let’s just get it out of the way that this is not authentic tabbouleh. M’kay? Cool. But! It is inspired by the classic dish. And oh my, is most certainly delicious.

We have bulgur tossed with a parsley / arugula / walnut pesto. We have plump juicy cherry tomatoes. Cool crisp cucumber! A touch of mint and green onion! A handful of extra arugula to pump up the green factor!

We toss it all together in a big bowl and then dig in. It’s fantastic served right away or after chilled in the fridge. Totally up to you.

It’s also pretty darn pretty. Which, well, just makes my heart happy.

These baked sweet potato falafel? My goodness have they been a long time coming!

I’ve had the recipe ready to go for well over two months. And yet every single time I went to take photos, something came up. Like clockwork. To the point where it got a wee bit eerie. <— Seriously, it was pretty creepy!

These baked sweet potato falafel are easy to make and irresistible! With warm spices, fresh herbs and sweet potato puree!

But! Last week the falafel gods must have been smiling down on me because hey-o! We have pictures!

Success!! And oh am I glad. Because these pop-able falafel bites are just too darn delicious. They have this sort of cozy warmness … very a la the flavors in this sweet potato hummus with roasted garlic (total favorite of mine!).

AND they are super simple to make. We pulse together most of the ingredients in a food processor and then mix with some sweet potato puree, flour and egg in a bowl. Form that mixture into balls and off they go to cook in the oven! They bake up soft and moist (yes, I said it!), with a slightly crisp exterior. Now that’s how we do a fun spin on falafel!

So, a very important question. How should you serve them??? Oooo baby do we have options.

1. My go-to? With roasted veggies (carrots, parsnips and red onion, please and thank you!), a grain of some sort and tahini sauce for drizzling.

2. On top of a big ol’ delicious salad or stuffed into a pita / wrap.

3. As an appetizer with the lemon yogurt sauce from these spinach chickpea falafel!

All most excellent choices. All you should totally give a try.

They are hearty, thick and packed with so much goodness, like dried cherries, dark chocolate, sliced almonds, pepita seeds! Oh and some cocoa powder too. So really, these are double chocolate breakfast cookies. <— We are so winning at this breakfast thing.

They are naturally sweetened with mashed banana and some honey, AND are 100% freezer-friendly. Make a batch (or two!) over the weekend when you have time and then enjoy throughout the week.

This orange chickpea and broccoli stir-fry? It’s completely perfect for allllll the Tuesdays.

Oh yes, you know what I mean. The workweek is in full swing and yet we are not even remotely close to the weekend. We need to get some wholesome food on the dinner table, but we need it to be easy and fast. AND it absolutely must be tasty!

A 30-minute healthy orange chickpea and broccoli stir-fry! With crisp veggies and a fantastic bright and tangy orange sauce!

So since this 30-minute simple stir-fry checks off each of those boxes, I hereby declare it perfect for Tuesdays!

I mean, the orange sauce alone. I think we all know that good stir-fries are all about the sauce. Okay fine, and the delicious crisp veggies, but still. THE SAUCE. It’s essential, yes?? And for this little number we whisk together a few ingredients in a bowl (like orange zest, orange juice, soy sauce, fresh ginger, maple syrup!) and then we are done. Ready to rock and roll along with the rest of the recipe.

Which is pretty much made up of other classic stir-fry staples – crisp broccoli, colorful bell peppers, nutty cashews! And of course the chickpeas listed up there in the recipe title. It’s basic but still jazzy enough to not be completely boring. Especially when we factor in that sweet, savory and tangy orange sauce!

It’s quinoa burger time!! Crispy, healthy, and perfectly flavorful quinoa burger time!

But, but, but. Before we get to today’s burgers let’s have a little chat.

Crispy on the outside & soft on the inside, these fresh herb & roasted garlic quinoa burgers make for a fantastic meal! Packed with so much flavor!

I know things have been a bit sporadic lately and I just wanted to say thank you for bearing with me. To make a long story very very short (and um, not super complain-y), we were just about to wrap everything up with our never-ending house reno … anddd then a new problem was discovered.

I’m tired, stressed and beyond frustrated … and still dealing with a stream of contractors who have to come in and out of the house to cut the power just one more time. Ompf. <— We’re keeping things real here today!

At some point everything will get back to normal, but for now, well. It’s still a bit nut-o. To the max.

So! Now that we have that out of the way, let’s get to these fresh herb & roasted garlic quinoa burgers! Here’s how they go down. We have some soft and buttery roasted garlic. We have some quinoa.  Some basic veggies, some walnuts and a whole boatload of fresh herbs! Parsley, chives and dill, oh my!

It all gets mixed together with a few other pantry staples, formed into patties and then cooked up to crispy perfection in a skillet.

They’re packed with flavor, not at ALL dry, and decently sturdy. That’s a triple threat right there when it comes to veggie burgers! Yes indeed.
