My Favorites 2012 – Part 1

Now that Christmas has come and gone, and with the New Year upon us, I thought it would be fun to take a look back at some of my favorite recipes since I started Cookie Monster Cooking this past April.  Long before I even began this blog, I always enjoyed reading these types of posts on other food blogs.  So, I knew I just had to do something similar myself.

I decided to split up my favorites into two posts.  Part 1 – not dessert.  Part 2 – dessert.  Because clearly that’s how I think about my food!   So let’s get started…

Wheat pizza dough – Because of this recipe, I can no longer buy any type of store-bought pizza dough.  This homemade version is just so much better.  Make it in advance and keep a batch in your freezer for whenever the craving for pizza strikes.

Homemade iced coffee and vanilla syrup – Okay I know, I’m cheating.  Technically, these were separate posts.  But these two recipes go together!  Discovering the secret to homemade iced coffee and vanilla syrup was truly a revelation for me.  I haven’t turned back since.

Oven baked fries – These babies have a perfectly crispy texture.  A wonderful side dish for burgers or, really, anything.  We made these a little too often this past summer…

Pork tacos with mango salsa – Flavorful pork tacos topped with a fresh mango salsa (and a quick weeknight meal).  We ate this on a regular basis when mango was in season.

Baked blueberry and apple oatmeal – This oatmeal is truly a staple in our house.  So simple and healthy at the same time.  Make a double (or triple!) batch over the weekend so you can eat leftovers for breakfast during the week.

Peanut butter and jelly swirl bread – Gah, I think the name says it all for this one.  The ever-popular combination of peanut butter and jelly rolled up into homemade bread.

Roasted sweet potato salad – An unexpected favorite.  This salad can be a light meal or a side dish.  The sweet potatoes and kale pair so wonderfully together.

Minestrone soup & honey yeast rolls – I know, I’m cheating again, but these two go hand in hand and we always have them together.  A light and simple soup with soft, tender dinner rolls.  A perfect meal in my book.

Company corn – Another unexpected favorite.  We had this with our Thanksgiving meal and it was such a hit.  It’s creamy but not overly rich – I think I need to make this again soon.

Chicken and broccoli stir fry – One of our very favorite quick weeknight meals.  Simple and fresh – so much better for you than takeout.
