Alright, we’re going to keep today’s post short and sweet.  I’m about to head back to DC after visiting my family in New Jersey for the last few days.  Besides helping my mom out with a few things, we cooked up a storm.  We made a number of meals and snacks to bring to my grandparents, which just made me happy.  It was a good trip.

So before I left to head up to New Jersey, I made another batch of this tropical trail mix to snack on during the drive.  And since I didn’t finish it all, I have some for the trip back as well.  Score.  I’ve been all about making homemade snacks lately and they come in handy for road trips or just to bring in to work.  I already shared with you my favorite trail mix with chocolate and now here is my favorite mix for a tropical version.  To me this has the perfect ratio of nuts to fruit and coconut.  But as always, feel free to adjust to your own taste.  Happy snacking!

Yield: about 5 ½ cups

Homemade Tropical Trail Mix

Recipe for homemade tropical trail mix. Make this simple snack at home in just a few minutes. With the perfect ratio of nuts, fruit and coconut.

Ingredients:

  • 1 cup roasted coconut chips*
  • 1 cup raw whole almonds (unsalted)
  • ½ cup unsalted pistachios
  • ¾ cup raw pecan halves
  • ½ cup dried pineapple
  • ½ cup dried blueberries
  • ½ cup dried strawberries
  • ½ cup chopped dried mango

Directions:

  1. Add all the ingredients to a large bowl. Mix to combine and store in an airtight container. Alternatively, you can add all the ingredients to a large plastic bag, seal and then shake to combine.

*I found the roasted coconut chips at Trader Joes. If you can’t find these, you can substitute unsweetened shredded coconut or coconut flakes. When I use these substitutions I prefer to toast the coconut. You can do so by setting a skillet over medium heat. Add the coconut to the skillet in an even layer. Cook, stirring frequently, until light brown and toasted.
