Chipotle Peach BBQ Farro Sandwiches
Oh look! More farro! Are you surprised? I didn’t think so. You know I love me some farro.
I buy it all the time from the bulk bins at our local food store because I find it necessary to always have some in my pantry. I mean, what if they are all out one week (which has happened!) and I want to make a recipe?? I need to be prepared.
And we also know that I get on food kicks constantly. So I need to be able to feed those obsessions.
Plus isn’t farro so pretty? Gracefully falling out of a cute little mason jar – that’s always how I keep it in my house right? Ha, I wish.
So. These sandwiches are a sort of spin on my vegetarian farro sloppy joes. The farro is used to replace the meat in both cases but today we are covering this glorious whole grain in a simple homemade sweet and smoky BBQ sauce. With peach preserves to help sweeten it up, smoky minced chipotle for a little heat and then all your other typical ingredients to make a killer sauce.
And then! You’ll also make a little onion topping – by kinda sorta caramelizing the onions. You won’t caramelize them all the way in the interest of a quicker weeknight meal but you’ll still get all sorts of awesome flavor that helps to balance out the smoky heat from the chipotle.
Then slap it all on some buns and get down and get messy!
