You can thank my little sister for these cookies.

She texted me a few weeks (months?) back to tell me that she has been making flourless cookies and oh-my-goodness how awesome they are. 

Which of course turned into me obsessively thinking about how I needed some flourless cookies in my life. Which turned into me deciding that I needed to come up with a recipe stat. Stat.

Because every recipe I found used either white or brown sugar.

And I realllllly wanted to make them with either honey or maple syrup. Because I’m cool like that.

Anywho, after quite a few batches of cookies, I present to you these flourless peanut butter trail mix cookies. Because I can’t leave well enough alone and needed to jazz them up somehow.

And let me tell you, these are almost dangerously easy to whip up. No fancy equipment. Just a bowl and a wooden spoon. And a relatively short list of ingredients.

Mix-Ins For These Peanut Butter Trail Mix Cookies

Can we talk about the mix-ins for a sec?

  • We have some oats.
  • Some honey roasted peanuts.
  • Some sliced almonds.
  • And some juicy raisins and chocolate chips.

You can tinker around with the mix-ins but just make sure you use the same total amount.

Now, these are not cloyingly sweet cookies. Which is how I like my sweets these days.

But if you want them a little sweeter you can sub out some of the nuts for extra raisins or chocolate. I like to give you options.

One bowl. Naturally sweetened. I’m in cookie heaven (which translates into trouble).

Flourless Peanut Butter Trail Mix Cookies

Just 25 minutes and one bowl to these flourless peanut butter trail mix cookies! Sweetened with maple syrup and packed with nuts, chocolate and raisins, they are impossible to resist. Dairy free and gluten free.

Ingredients

  • 1 cup natural creamy peanut butter*
  • ΒΌ cup pure maple syrup
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • Β½ teaspoon baking soda
  • ΒΌ teaspoon salt
  • ΒΌ cup rolled oats
  • ΒΌ cup honey roasted peanuts, roughly chopped
  • ΒΌ cup sliced almonds
  • ΒΌ cup raisins (or golden raisins)
  • 2 tablespoons mini chocolate chips**

Instructions

  1. Preheat the oven to 350ºF. Line a large baking sheet with parchment paper and set aside.
  2. In a large bowl, mix together the peanut butter, maple syrup, egg, vanilla, baking soda and salt until combined (it will look really runny at first from the maple syrup - but keep mixing and the peanut butter will absorb it (for lack of a better way to describe it)).
  3. Add in the oats, peanuts, almonds, raisins and chocolate chips. Mix until combined (the batter will be thick - you’ll need to use a little arm power!).
  4. Scoop about 1 ½ to 2 tablespoons of dough (I use my large cookie scoop) and drop on the prepared baking sheet about 2 inches apart. Use your fingers to flatten each cookie a little.
  5. Bake for about 10 to 13 minutes, until the cookies are set and just starting to lightly brown. Let the cookies cool directly on the baking sheet for 5 minutes before removing to a wire rack to cool completely.

Notes

*If you can, I recommend using a natural peanut butter that is no stir here. I use the Whole Foods brand creamy organic peanut butter and it works perfectly (<--- not sponsored!). If you do have to stir your peanut butter, you need to make sure it is very well stirred before you use it here (i.e. it’s not at all separated and you stir it together really well. I can’t emphasize that enough!). If you don’t stir it completely together, it will be runny for the recipe. You could also use regular (not natural) peanut butter instead.

**To keep these dairy free - use dairy free chocolate chips.
