Healthy Weekly Meal Plan – 9.19.15

A collage of five photos of recipes in this week's healthy meal plan.

Another Saturday, another healthy weekly meal plan!

Today you’ll find five healthy dinner ideas for this coming week – we’re talking sweet potatoes, stir fries and soups, oh my!

As always, vegetarian options are suggested if the meal contains meat. And of course, two printable grocery lists are included – one that is already filled out and another that you can customize yourself!

Now, one last thing before we get to the recipes. I forgot to mention last week that the filled-out grocery list is color-coded to help you out when shopping.

Green = produce. Red = dairy and meat. Purple = non-perishable items, like pasta, rice, spices, etc.

Additionally, pantry staples such as salt, pepper and olive oil will not appear on every grocery list as they are assumed to be on hand. So double check to make sure you are stocked up!

And now, the food!

White Bean Avocado and Lime Soup from Making Thyme for Health

Plan Ahead: This soup can be made up to 2 days in advance and then served with avocado the day of. Serve with a side salad and tortilla chips.

Vegetable and Black Bean Enchilada Pasta from Cook Nourish Bliss

Plan Ahead / Tips: If you cannot find good fresh corn, sub in 1 cup frozen corn kernels instead! I also like to have extra enchilada sauce on hand for reheating any leftovers.
