Merry day after Christmas! How was your holiday?? I hope you are still enjoying some relaxing time with family and friends. I fully intend to stay in my pajamas for quite some time today. Yessss.
So, let’s quickly talk about our healthy weekly meal plan. That way we can all get back to some quality couch and pajama time.
We are switching it up slightly this week because of the holidays. Today we have three awesome dinner ideas, one fantastic appetizer (NYE anyone?) and one delicious breakfast recipe (New Year’s Day? yes yes)!
As with all our healthy weekly meal plans, two printable grocery lists can be found at the end of the post – one that is completely filled out and another that you can customize yourself.

Prep Ahead: Chop up the vegetables a day in advance.
Saffron Vegetable Soup with Quinoa from Flavor the Moments
Prep Ahead: This soup comes together so quickly, but you can prep your veggies ahead of time to make things go even faster!
Creamy Sweet Potato and Black Bean Pasta Skillet from Cook Nourish Bliss
Prep Ahead: If using homemade sweet potato puree, this can be made in advance. Otherwise, just use store-bought canned puree for a 30-minute meal!
Strawberry Bruschetta from Spoonful of Flavor
Prep Ahead: You can use any kind of your favorite fruit. I always use strawberries but you can use grapes, blueberries, cherries and more.
Sweet Potato Home Fries from The Roasted Root
Prep Ahead: The sweet potatoes can be chopped ahead of time.
