Hey-o! It’s Saturday … and that means it’s time to celebrate with another fantastic meal plan! Because let’s face it, I get super excited knowing I have lots of delicious food coming my way in the week ahead (<— just me??).
Anywho, we have so many awesome meals on tap … from chili to curry to pasta to sweet potatoes! Happy happy happy!
As with all our healthy weekly meal plans, vegetarian options are suggested if the dish contains meat. And! Two printable grocery lists can be found at the end of the post – one that is completely filled out and another that you can customize yourself.

Prep Ahead: Make the rice ahead of time and reheat just prior to serving.
Vegetarian Option: Double the amount of fresh vegetables instead of using chicken.

Prep Ahead: The squash can be roasted a day ahead of time. To save some time, you can use cooked chicken, such as rotiserie chicken, instead of raw.
