Well hello! Happy Saturday to you!

Tell me – any fun plans this weekend?? I am hoping to spend some quality time outside. Although, the weather is so all over the place here in the N to the C. Hot, then cold. Hot, then cold again. It’s maddening! Especially since I am dying to get my herb garden started … but, those darn freeze warnings are making us hold off for now. We shall see!

But anyway, let’s talk this week’s healthy meal plan! We have no shortage of awesome dinner ideas for the coming days. Like a mango and chicken salad, an asparagus frittata, even some pesto steak tacos!

As with all our healthy weekly meal plans, vegetarian options are suggested if the dish contains meat (and can be easily substituted). Plus! Two printable grocery lists can be found at the end of the post – one that is completely filled out and another that you can customize yourself.

Strawberry, Mango and Avocado Quinoa Salad from Spoonful of Flavor

Prep Ahead: The quinoa can be cooked in advance.

Prep Ahead: The skewers may be made ahead of time and grilled just before serving. The tzatziki sauce may also be made ahead if using.

Vegetarian Option: Skewers may be made vegetarian by omitting the chicken and substituting with tofu or just veggies!

Prep Ahead: All the components for the salad can be prepared in advance.

Vegetarian Option: Leave off the chicken. You can add extra chickpeas if desired!

Prep Ahead: There’s no need to prepare anything for this recipe in advance, as it comes together in a flash!

Cilantro Pesto Steak Tacos from greens & chocolate

Prep Ahead: You can make the pesto a day in advance.

Vegetarian Option: Use sautéed veggies (bell peppers, squash, onions, mushrooms, etc.) and black beans instead of steak.

Protein Option: You can also use chicken or shrimp.
