Apples, apples, apples! Gosh I just love apple season. Is that obvious? What gave me away?

It seems like so many people have already moved on to pumpkin, but I have a self-imposed no pumpkin until October 1st rule. I need plenty of time to focus on and fully enjoy my beloved apples. Yes yes yes.

So, letโ€™s focus on all things warm and cozy with this spiced cranberry apple baked oatmeal.

Itโ€™s packed with apples (obviously). Dried cranberries. Oats. Warm spices. Pecans.

Itโ€™s perfectly lightly sweet. AND like pretty much all oatmeal, reheats well. Make it on the weekend and enjoy for breakfast all throughout the week.

Also, side note – can we talk about my most recent discovery at the grocery store?

Sweetened condensed coconut milk. And if you drizzle a little over the top of this oatmeal when serving? Um, yeah, heaven.

Tips & Tricks For This Cranberry Apple Baked Oatmeal

  1. Letโ€™s first talk about the mix-ins. As far as the apples themselves, you could certainly peel them if you would like, but I donโ€™t find it necessary here. Plus, itโ€™s faster to just leave the skin on.
  2. I think that a mix of apples and pears would be just lovely here. If youโ€™re digging that idea, Iโ€™d probably do 1 cup chopped apple and 1 cup chopped pear.
  3. The nuts. I personally ADORE pecans with apples, but you could absolutely use any nut youโ€™d like (or have on hand). Or just leave them out entirely.
  4. As far as the milk, use whatever you like. I am partial to the almond milk but really anything will work.
  5. Be sure to use certified gluten free oats if needed for your diet.
  6. The longer the oatmeal cools after removing from the oven, the sturdier it becomes. So dig in as fast or as slow as youโ€™d like. You can cut it into squares / chunks once itโ€™s cooled down for some time, versus if you serve quickly, itโ€™s more โ€œloose.โ€ But itโ€™s delicious either way.

Spiced Cranberry Apple Baked Oatmeal

Ingredients

  • 1 ยฝ cups old-fashioned rolled oats
  • 1 ยผ teaspoons ground cinnamon
  • ยฝ teaspoon ground nutmeg
  • โ…› teaspoon ground cardamom
  • โ…› teaspoon ground cloves
  • ยผ teaspoon salt
  • ยพ teaspoon baking powder
  • 1 โ…” cups unsweetened vanilla almond milk
  • โ…“ cup pure maple syrup
  • 1 ยฝ teaspoons vanilla extract
  • 2 large eggs
  • 1 extra-large apple, cored and chopped (or about 2 cups)
  • ยฝ cup dried cranberries
  • โ…“ cup chopped raw pecans

Instructions

  1. Preheat the oven to 350ºF. Grease a 2-quart baking dish with olive oil spray (or nonstick). Set aside.
  2. In a large bowl, mix together the oats, cinnamon, nutmeg, cardamom, cloves, salt and baking powder until well combined.
  3. In a medium bowl, whisk together the almond milk, maple syrup, vanilla and eggs until well combined. Add to the bowl with the oats and mix to combine.
  4. Spread half of the apples and half of the cranberries in the bottom of the prepared baking dish. Pour the oat mixture evenly over the top and spread evenly. Sprinkle the top with the remaining apples, cranberries and all of the chopped pecans.
  5. Bake for about 40 to 45 minutes, until golden brown and set.
  6. Let cool for about 5 to 10 minutes. Serve as desired (top with more almond milk or even coconut milk, additional nuts, additional maple syrup, etc.).
