This delightful dairy free apple cobbler is the perfect way to celebrate all the magic of fall.

It’s easy to make. 

Filled with tender, sweet apples. Plenty of warm spices. 

And the most incredible biscuit-y, crumbly, cookie dough-esq topping that bakes up soft and just a touch crisp. 

It’s cozy, it’s comforting. And when topped with a scoop of dairy free vanilla ice cream?

It’s autumn dessert perfection.

Tips & Tricks

  1. Be sure to slice your apples so that they are uniform in size. This allows them to cook evenly and you won’t have a weird mix of hard and mushy pieces in the final product.
  2. As far as the type of apples, I like to use either gala or honeycrisp.
  3. Now, if you want to switch things up, you can use half apples and half pears in the filling. It’s absolutely fantastic this way as well. 
  4. When measuring out your flour for the topping, fluff it in the bag then scoop into your measuring cup with a spoon and level off. If you dunk the cup directly into the bag, you’ll likely use too much.
  5. I think coconut oil will work instead of the dairy free butter in the topping, although I haven’t tried this myself. If you go this route, be sure to melt the oil first and then measure out the correct amount.

How To Store

Cobbler is best enjoyed freshly made and served all warm and delicious from the oven. However, if you have leftovers, you can store as follows:

Fridge: Let the cobbler cool to room temperature then wrap the pan tightly in foil or transfer to an airtight container. It will keep in the fridge for about 4 to 5 days.

When ready to enjoy, reheat the cobbler briefly in the oven (preferred method) or microwave.

Ingredients

For the filling:

  • about 2 ½ pounds sweet and crisp apples, peeled, cored and sliced ¼ inch thick*
  • ⅓ cup pure cane sugar (or granulated sugar)
  • 1 tablespoon cornstarch
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon 
  • ¼ teaspoon ground nutmeg
  • pinch of fine sea salt

For the topping: 

  • 1 cup all-purpose flour** 
  • ½ cup pure cane sugar (or granulated sugar)
  • 1 teaspoon baking powder 
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt 
  • ½ cup dairy free butter, melted and cooled slightly***
  • 1 ½ teaspoons vanilla extract

Serving Ideas:

  • dairy free vanilla ice cream 
  • dairy free whipped topping 

Instructions

  1. Preheat the oven to 375ºF. Grease a 9x9 inch baking dish lightly with nonstick spray and set aside.

For the filling:

  1. In a large bowl, toss together the apple slices, sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg and salt until well combined. Spread the mixture in an even layer in the prepared baking dish.
  2. Bake for 15 minutes then remove from the oven.

For the topping:

  1. While the apples are baking, whisk together the flour, sugar, baking powder, cinnamon and salt in a medium bowl. Pour in the melted dairy free butter and vanilla extract and stir until a sort of cookie dough forms.
  2. Use your fingers to drop clumps of the mixture evenly over the partially baked apples.
  3. Return the pan to the oven and bake for another 30 minutes, until the topping is lightly browned and the apples are bubbling / juicy.
  4. Let stand for about 20 minutes, then serve topped with your favorite dairy free ice cream or dairy free whipped topping.

Notes

*You want 7 cups total once the apples are sliced. Right around 2 ½ pounds should give you this amount (I like to err on the side of slightly over 2 ½ pounds to make sure I don’t run out).

**To keep this gluten free - use a 1 to 1 gluten free all-purpose flour. I tested the cobbler several times with Bob’s Red Mill Gluten Free 1 to 1 Baking Flour and we thought it came out great that way as well (not sponsored, just what I used). 

***To keep this nut free and / or soy free - be sure to use an appropriate dairy free butter.
