Let’s discuss the fact that I hate bananas. And yet here I am shoving a banana recipe in your face.

I actually gagged when I was mashing up the bananas for these bars. There’s something about the texture that weirds me out.

Yet, I know they are good for me, so I keep trying to like them. But inevitably I wind up with a bunch of bananas sitting on my counter that turn brown.

Clearly I have no choice but to bake them into something. Because I cannot let them go to waste.

And here’s the thing … and why we are talking about banana bread oatmeal bars today.

Despite the fact that I hate bananas on their own, I seem to be able to get behind banana bread or muffins.

Or these healthy banana bars. Which have quickly become my new favorite snack for either before or after a workout.

There’s no oil, butter or refined sugar. Just banana! And some honey and maple syrup. Plus, they are packed with oats and white whole wheat flour. And lots of warm spices.

And they are soft and chewy. A necessary requirement for most of my baked goodies.

And I love em, love em.

Or if you are feeling fancy, go ahead and smear some creamy peanut butter on top.

Ummm yeah. Takes them to a whole different level.

Healthy Banana Bread Oatmeal Bars

Soft and chewy, these healthy banana bread oatmeal bars are a delicious wholesome snack! With no oil, butter or refined sugar, they’re instead packed with banana, oats, honey and warm spices. Dairy free, nut free and vegetarian.

Ingredients

  • 1 ΒΌ cups old-fashioned rolled oats, plus extra for sprinkling
  • 1 cup white whole wheat flour
  • 1 teaspoon ground cinnamon
  • Β½ teaspoon ground nutmeg
  • ΒΌ teaspoon ground cardamom
  • ΒΌ teaspoon ground allspice
  • Β½ teaspoon baking powder
  • ΒΌ teaspoon sea salt
  • 1 large egg
  • 1 cup mashed banana (about 2 medium or 3 smaller ripe bananas)
  • ΒΌ cup honey
  • 2 tablespoons pure maple syrup
  • 1 Β½ teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350ºF. Line an 8x8 inch square baking dish with parchment paper and then spray lightly with nonstick cooking spray.
  2. In a medium bowl, whisk together the 1 ¼ cups oats, flour, cinnamon, nutmeg, cardamom, allspice, baking powder and salt. In another medium bowl, mix together the egg, banana, honey, maple syrup and vanilla.
  3. Add to the bowl with the dry ingredients and mix until just combined (do not overmix). The batter should be thick.
  4. Transfer the batter to the prepared baking dish and spread in the pan. Sprinkle the top lightly with additional oats if desired.
  5. Bake for about 15 minutes, or until a toothpick inserted into the middle comes out clean.
  6. Transfer the pan to a wire rack to cool completely. Once cool, cut into squares.
