Roasted Strawberry, Brie and Arugula Quesadillas
Sweet and salty, these roasted strawberry, brie and arugula quesadillas are completely irresistible! With jammy berries, gooey brie and fresh peppery arugula, they’re on a fun twist on classic quesadillas. Vegetarian with gluten free option.
Note: This recipe is NOT dairy free. It was published before Cook Nourish Bliss transitioned to dairy free recipes and remains popular with long time readers. You can try using substitutions to make it dairy free, however I have not tested this myself and can’t say how it will turn out.
Cheesy. Easy. Summery. That’s exactly what these roasted strawberry, brie and arugula quesadillas bring to the table.
I made these after I decided I needed to find a more acceptable way to consume brie.
I know I’m late to the party, but I finally made that appetizer where you stick a wheel of brie inside of puff pastry, top it with some jam (homemade strawberry jam to be exact – so good), and then fold it up and bake. And Oh. My. Good. Grief.
The entire thing was consumed ridiculously fast. Faster than I should probably admit.
But anyway, I made a mental note (as I was still eating it of course) that I needed it again soon. But really, I clearly do not need to eat cheesy puff pastry on a regular basis.
And that’s where these quesadillas came in.
There’s arugula. And whole wheat tortillas instead of the buttery puff pastry. So that makes it cool to eat them all summer, right? That’s what I’m telling myself at least.
Roasted strawberries with a touch of balsamic vinegar. Fresh spicy arugula. Brie (duh).
All folded up in a hot quesadilla finished off with a drizzle of balsamic glaze (can’t get enough). What’s not to love?

Roasted Strawberry, Brie and Arugula Quesadillas
Sweet and salty, these roasted strawberry, brie and arugula quesadillas are completely irresistible! With jammy berries, gooey brie and fresh peppery arugula, they’re on a fun twist on classic quesadillas. Vegetarian with gluten free option.
Ingredients
For the strawberries:
- 16 ounces strawberries, hulled and cut in half (quartered if really large)
- 1 tablespoon maple syrup
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- ½ tablespoon olive oil
- pinch of sea salt
For the quesadillas:
- 3 large whole wheat tortillas*
- about 3 ounces brie, rind removed and sliced
- 1 to 1 ½ cups baby arugula
- balsamic glaze, for drizzling
Instructions
For the strawberries:
- Preheat the oven to 375ºF.
- Place the strawberries on a rimmed baking sheet or dish. Drizzle with the maple syrup, honey, balsamic and olive oil. Sprinkle with the salt. Toss to combine and spread in an even layer.
- Bake for about 25 to 30 minutes, gently stirring once halfway through, until the strawberries have released most of their juices and are nice and tender. Let cool slightly.
For the quesadillas:
- Place the tortillas on a work surface. Place some of the brie slices on half of each tortilla. Top each with some of the roasted strawberries and then the arugula. Fold the empty half of the tortilla over the filling to form a semicircle.
- Set a skillet over medium / medium-high heat. When hot, spray lightly with nonstick cooking spray. Place an assembled quesadilla in the pan and cook, flipping once halfway through, until both sides are browned and the cheese is melted.
- Cut into triangles and serve with a drizzle of balsamic glaze.
Notes
*To keep these gluten free - use gluten free tortillas of choice.
The amounts listed in the recipe are what I used to make 3 good-sized quesadillas. Depending on how full you like to stuff your quesadillas, you may be able to get more than 3 (or not!).

This quesadilla really has all of the flavors of the encrusted brie… the berries, the cheese, the tortilla crust! Balsamic glaze is the nectar of the Gods. Adding that to the cheese and fruit is perfect! With a gluten-free tortilla for my daughter, this will be lunch tomorrow! 🙂

Cheese and honey goes so so well together, and strawberries goes so so well with brie, so it’s a brilliant idea to put all 3 of these together … and in a quesadilla! Genius! I also love the sound of the puff pastry version to be honest. Reminds me of my favourite Greek cheese and honey in pastry. I bet that balsamic glaze is the icing on the cake, as well!

I love Brie, especially when it’s all warm and melty and it goes so well with fruit so you can almost kid yourself into believing it’s healthy….kinda! This is a great way of using it with all those strawberries, arugula and balsamic glaze, yum!

Here in Italy we’re not that much used to sweet/savory combos, at least for lunch and dinner, so the presence of the strawberries sounded weird to me at the beginning, but then I looked closer to the pictures and thought a little bit about the freshness of the flavor and yeah, I kind of gave in and now I can’t wait to make these quesadillas! Who knows, maybe I’ll become a super fan of fruits into main dishes!

I love brie cheese so much! This is actually a great idea, and a lighter version but similar satisfaction! Roasted strawberries were LITERALLY what I made today!! For a totally different recipe, but I know how delicious they are and know that these quesadillas were delish! Now I feel like I am rambling but I am KIND OF now intrigued to try baked brie in puff pastry…oops!!

Ooooh that brie appetizer. Years ago I went on and on about how I didn’t like brie (I know, weirdo). Then my mom prepared it in the pastry with jam and I proceeded to sit next to the appetizer table all night and eat half of it. I’m a brie convert! I used to work at a restaurant that sold the baked brie in puff pastry and at the end of every shift we would get a free meal, and on more than one occasion I picked that as my meal, it was SO good!! But, I guess you are right, it wouldn’t be a good idea to eat puff pastry for every meal… Quesadillas are already one of my favorite foods and I think I would enjoy them even more stuffed with brie and roasted strawberries! I need these now 🙂

The more cheese the better! I’ve never tried the puff pastry wrapped brie, and maybe it’s better that I keep it that way and just make your quesadillas instead. 😉 I haven’t tried roasted strawberries, but most anything is better roasted in my opinion so I I really want to give it a try!
